Imagine a bag of those delicious little cinnamon-sugar slathered doughnuts you get for $5 at the PNE. Now imagine that fabulous, sugary buttery flavour in the form of a muffin—that’s exactly what these doughnuts taste like. Cinnamon sugar doughnuts; not only are they ridiculously easy to make, but they’re quick, impressive and don’t require any deep frying. 



Cinnamon Sugar Muffins

These cinnamon sugar muffins have a wonderfully soft but solid texture. This super simple topping is what truly makes this muffin something special.










Cinnamon Sugar Muffins (recipe from velvetlava)

Ingredients

  • 1/3 cup melted butter 
  • 1/3 cup sugar 
  • 1 egg 
  • 1 1/2 cup flour 
  • 1 1/2 tsp baking powder 
  • 1/2 tsp salt 
  • 1/2 cup milk 
  • 1/2 tsp cinnamon 
  • Optional: 1/4 tsp nutmeg 

Cinnamon Sugar Topping

  • 1/3 cup granulated sugar 
  • 1/2 cup melted butter 
  • 1 tsp cinnamon 

Directions

  1. Preheat your oven to 350F 
  2. Prepare a muffin tin by greasing or lining about 10-12 cups. 
  3. In a large bowl, combine the flour, baking powder, salt and cinnamon. 
  4. In a separate bowl, mix together the butter, sugar, egg, and milk. 
  5. Gradually stir the wet ingredients into the dry ingredients and mix until just combined. The texture of this batter is relatively thick and lumpy. 
  6. Distribute it evenly among the muffin tin, about 2-3 tablespoons per cup. 
  7. Bake for about 20 minutes or until they turn a light golden brown. Poke a bamboo stick or toothpick through the middle to check. 
  8. While the muffins are cooling, start making the topping. Stir together the sugar and cinnamon. 
  9. Melt the butter in fairly deep bowl. You want to be able to dunk the doughnuts in it. 
  10. Using your fingers, dip the muffin in the melted butter and allow any excess butter to drip off. 
  11. Now, you can either sprinkle the cinnamon topping on with a spoon or dip the muffin into it. I prefer the sprinkling method as it’s far less messy and you don’t clump up your topping as quickly. 
  12. Be sure to use every last bit of that delicious cinnamon sugar topping and enjoy! 

For an even more decadent cinnamon sugar muffin, try this version with a nutella filling. Ridiculous!
