Triple Chocolate Brownies

Ingredients
- 2/3 cup all-purpose flour
- 2 1/2 tbsp cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup semi-sweet chocolate
- 1/2 cup butter or margarine (room temperature)
- 3/4 cup packed brown sugar
- 2 eggs
- 1 tsp pure vanilla extract
- 1/2 cup white chocolate chips
- 1/2 dark or milk chocolate chips (depending on your preferred sweetness)
- Optional: extra 1/4 cup chocolate chips for drizzling
Directions
- Grease a regular or mini muffin tin. Set aside.
- Combine flour, cocoa powder, baking soda, baking powder, and salt in a small bowl.
- On medium heat, melt the semi-sweet chocolate and gradually add in the butter, stir until smooth. Be very careful, keep the heat on medium-low—once you burn it, or it begins to curdle, you can’t go back!
- Pour the melted chocolate and butter into a large bowl and mix in the brown sugar and egg until combined. Stir in the vanilla.
- Preheat your oven now to 350F.
- Gradually add in the flour mixture.
- Stir in the chocolate chips. To make sure they don’t all sink to the bottom, toss the chocolate chips with a dusting of flour before adding them into the batter.
- Fill the regular or mini muffin tins up about 3/4 of the way full.
- Bake for 15-20 minutes.
- Once the brownies are completely cooled, start making your chocolate drizzle by melting 1/4 of your extra chocolate chips.
- Fill a regular sandwich bag or a piping bag and drizzle across your cooled brownies. For a pop of Easter colour, use white chocolate and add a few drops of food colouring for a whimsical touch.
